Soup:
Peeled and washed carrot, cut it into rounds and put it together with the onion (cleaned and washed) whole, with the pepper cut into large strips and with the bay leaf in boiling water. While the vegetables are boiling, prepare the dough and the filling. Don't forget to remove the onion from the soup after it has boiled.

Dough and filling:
1. Put the flour in a bowl, dissolve the salt in cold water and pour the mixture over the flour. Spoon with a spoon until all the water is absorbed, then knead it manually until you get a homogeneous dough. If necessary, add more water or flour to reach the desired consistency. Set it aside until you prepare the filling.
2. For the filling, put the meat, spices, finely chopped onion, oil and dried parsley in a bowl and mix well.

1. Roll the dough and cut it into equal pieces (each piece weighing 20g), rotate each piece so that you get a ball, then roll out each ball as much as you can.

3. Finish making all the dumplings and then let them go easily in the hot soup, after each added dumpling, turn them slightly in the soup so that they do not stick to the bottom of the pot.
4. Let the dumplings boil for 20 minutes, add the borscht (heated separately) over the soup and let it boil for another 15-20 minutes.
5. Turn off the heat, add the olive oil and a piece (about the size of a finger) of fresh ginger.

Note: if you thought it was too much work with dividing and weighing the dough, then you can divide it in two, stretch each piece as well as you can and cut out circles with a cup. :)


Light pea soup with dumplings

Ingredients for 8 liter pot:
Pea seeds 1 kg
Onions 2 pcs
Carrots 2-3 pcs
Celery 1/2 pcs
Parsley 1 pc
Clear chicken soup 3 liters
Eggs 4 pcs
Flour 120 g
Gray 80 g
Cream 400 g
2 tablespoons oil
Butter 40 g
Salt and pepper

Finely chop the onion, carrots, parsnips and celery.
In a pot put 40 g of butter together with 3-4 tablespoons of vegetable oil (olive or sunflower).

Saute the vegetables together with a teaspoon of salt for about 7-8 min.

Then add the hot chicken soup and cook for 15 minutes.

Meanwhile, prepare the dough for the dumplings.
In a bowl put 2 eggs and 2 egg whites with a little salt. Mix until you get a firm and whitish composition.

Add one tablespoon of flour and semolina at a time, until the whole amount is integrated.

You will get a suitably thick composition. Set it aside.

Add the peas to the pot and increase the heat until it starts to boil.

Add the dumplings formed with a teaspoon.

Put the lid on and simmer for 15 minutes.

When ready, turn off the heat and leave for another 30 minutes with the lid on.
Serve with freshly ground pepper and cream.


Beef soup with dumplings

Ingredients for 4 servings of Beef Soup with dumplings: 400 gr beef, 80 gr semolina, 150 gr carrots, 150 gr parsnips, 50 gr celery, 50 gr onion, 1 egg, 80 gr cow cheese, 50 gr cheese, 1 leg parsley, 5 g pepper, 10 g salt.

Preparation Beef soup with dumplings:

o Beef is cut into small pieces. Peel a squash, grate it and cut it into cubes. Finely chop the parsley. The cheese is grated. In the egg, the egg white separates from the yolk.
o Meat is boiled in 2 liters of salted water. When the foam appears, remove it with a wooden spoon. When it is half cooked, add the vegetables and continue cooking.
o When the food is ready. the meat is removed in another bowl and the soup is strained.
o Separately prepare the dumplings. thus: beat the yolk in a bowl, gradually add semolina, cottage cheese, grated cheese, salt, pepper and beaten egg whites. A composition is thus obtained from which dumplings are formed with a spoon.
• Boil the dumplings in boiling water with a little salt. After boiling, remove and transfer to hot soup.

. The preparation can be boiled in a bowl, bowl or cup, with green parsley on top.

Remove the vegetables from the soup after they have boiled, turn on the heat and start to put the dumplings with the spoon. Fill 3 times with cold water and simmer until the dumplings have doubled and become fluffy.

Add more salt and pepper if needed and sprinkle fresh parsley on top.

Add all the soup ingredients to the KitchenAid® Power Plus® blender jar.

  • 1 3/4 cup (420 ml) clear vegetable soup or filtered water
  • 1 3/4 cup (420 ml) canned fatty coconut milk (1 can of 400 ml)
  • 1 cup (140 g) raw, unsalted cashew nuts
  • 1 tablespoon fresh lime juice
  • 1 tablespoon gluten-free tamarind sauce
  • 2 teaspoons fresh, grated ginger
  • 1/2 teaspoon yellow curry powder
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon sea salt or more to taste
  • 1/8 teaspoon cayenne pepper
  • 1 thin grated zucchini in the shape of a noodle
  • 1 red bell pepper, cut into julienne
  • 1/2 cup (14 g) small, finely chopped coriander

Add all the soup ingredients to the KitchenAid® Power Plus® blender jar.

Attach the cover and choose the Adapti-Blend ™ Soup program.

Process until the machine turns off automatically. Alternatively, process for about 5 minutes, starting at speed 1 and gradually increasing to speed 10.

The soup will be hot when ready. Divide the soup evenly into four bowls, then add equal amounts of grated zucchini, bell pepper and coriander. Enjoy immediately.
