Ingredients

  • ¾ Cup chopped onions
  • 1 serrano chile, chopped
  • 2 Tablespoons dried plum purée
  • 2 Tablespoons brown sugar
  • 2 Tablespoons soy sauce
  • 1 Teaspoon tomato paste
  • 3 Tablespoons vegetable oil
  • 4 Cups cooked brown basmati rice
  • 8 Ounces firm tofu, diced
  • ½ Cup diced California dried plums
  • ½ Cup peas
  • ½ Cup chopped scallions
  • ¼ Cup chopped roasted unsalted peanuts
  • ¼ julienned carrot
  • ¼ peeled, seeded cucumber, cut into thin half-moons

Directions

In a food processor or blender, process the onions and chiles to make a paste. In a small bowl, whisk together the dried plum purée, sugar, soy sauce, and tomato paste.

In a large nonstick skillet, heat the oil over high heat. Add the onion mixture and cook 1 to 2 minutes. Add the dried plum mixture, rice, and tofu; stir-fry until hot, about 5 minutes. Add the diced dried plums, peas, and scallions and stir-fry 2 minutes more. Transfer to a serving bowl or individual plates and garnish with peanuts, carrots, and cucumbers.

Easy Indonesian Fried Rice (Bumbu Nasi Goreng)

I bought a jar of Kokita brand Nasi Goreng seasoning at the Uwajimaya store in Seattle and it made the best fried rice I had ever eaten. After scraping the last bits from the side of the jar, I didn't want to make the hour drive just for more (although it was tempting), so I improvised based on the ingredients. If you can find it, I highly suggest buying the pre-made product as it makes preparation very simple. After eating Indonesian fried rice I haven't been able to go back to making the more popular Chinese version. What makes this different than Chinese rice is the prominence of chili rather than soy sauce. Shallots, smaller and milder than the onion, are a pleasant addition. I like to add a lot of chili and use fish sauce as the source of saltiness. Many recipes call for shrimp paste, I haven't tried it and think it's just fine without since the fish sauce adds a seafood taste. There are other posted recipes for this dish, but this one is simpler and the eggs can be cooked right in with the rice. This is also great as a vegetarian (even vegan) dish, just omit the shrimp and use fried tofu instead of egg and use soy instead of fish sauce. Warning: this may be spicy for those with more delicate palates.


1. Nasi Goreng (Indonesian Fried Rice)

I don&rsquot know about you, but I have such a weak spot for fried rice. It&rsquos easy to make and is just what I need for a late-night snack.

The key to making the perfect fried rice is to start with cooked and cooled rice.

I actually use leftover rice that&rsquos at least a day old. Using fresh rice will result in a sticky mess.

Don&rsquot be afraid to add in any chopped veggies you have on hand, and you can quickly bulk this out with shrimp, chicken, or tofu.


Back Story of Nasi Goreng

The Literal meaning of Nasi Goreng is “Fried Rice” in both Indo and Malay language. The origin of this dish can be trace to china. Since the Indonesian people learned stir frying technique from Chinese traders around 10th century BC. During that period the trading relation between these two countries improve a lot. And many Chinese inhabitants settled in the South Asian Archipelago. They brought there food and culture to there new home. And one their dish was fried rice (Chǎofàn). This dish became hit among the people quickly and people started creating this dish with local ingredients and named it Nasi goreng.


  • 1 clove shallot
  • 1 clove garlic
  • 1 red chili, seeded
  • 1/2 teaspoon toasted belacan, terasi
  • 1/2 teaspoon palm sugar
  • 1/2 tablespoon kecap manis
  • 8 oz. (226 g) overnight rice
  • 1 fried egg, well done
  • 2 tablespoons oil
  1. Break the overnight or leftover rice using the back of a spoon so they don't clump together. In a wok, toast the belacan on low heat until it becomes dry and aromatic. Toasted belacan should be somewhat powdery and appear like tiny granules. Fry an egg (well-done) and set aside.
  2. Using a mortar and pestle or a mini food processor, blend the shallot, garlic, red chili, and toasted belacan. Transfer the blended flavoring paste into a small saucer.
  3. Heat up a wok and add oil. Add the flavoring paste and stir-fry until aromatic or when the oil separates. Add the rice into the wok and stir well with the flavoring paste. Add kecap manis and palm sugar into the rice and continue to stir-fry and make sure that they are well blended with the rice. Dish out, top the nasi goreng with the fried egg and serve immediately.

How to Make Nasi Goreng &ndash the Recipe Method

Cook the Peppers and Vegetables. Heat the oil in a large pan or wok over high heat. Add the peppers and shallot. Cook for 2-3 minutes to brown slightly. Add the garlic and cook another 30 seconds, stirring.

Cook the Eggs. Add the eggs and scramble them up. Cook them for 30 seconds to 1 minute, stirring, until the eggs cook mostly through.

Add the Rice and Other Ingredients. Lower the heat to medium-high heat and add the cooked rice, green onion, soy sauce, kecap manis and shrimp paste. Season with salt to taste.

Stir fry the rice until the rice starts to caramelize, 2-3 minutes, scraping up the bottom of the pan as you go to avoid burning.

Garnish. Garnish with cucumber and tomato and serve!

Boom! Done! Nasi goreng is ready to serve! One of my favorite fried rice dishes. Indonesian fried rice is going to be your new favorite fried rice, I think. Looks great, doesn&rsquot it? Very tasty. Are you serving your with or without the fried egg?


What Else is in an Authentic Nasi Goreng Recipe?

In addition to the rice, you will find ingredients like chicken or beef scraps, tomato, peppers, chili and shallots. It might have originated from Southern Chinese fried rice because other Indonesian dishes are similar to Chinese ones, a good example being mie goreng, which is fried noodles.

You will find nasi goreng all over Indonesia as well as Singapore and Malaysia, and it is also popular in the Netherlands because of colonial ties with Indonesia. You can even find it frozen in 7-Eleven and other convenience stores, but for the best nasi goreng authentic recipe, nothing beats making your own. That applies to most recipes actually!

Fragrant Indonesian fried rice recipe

A wonderful rice stir-fry, making the most of spring onions, cucumber, peanuts, roast chicken, and onions.

Ingredients

  • 400 g brown basmati rice
  • 4 large eggs, beaten
  • 250 g leftover roast chicken, shredded
  • 1 onion, peeled and sliced
  • 3 garlic cloves
  • 1 red chilli
  • 1 tbsp brown sugar
  • 2 tbsp soy sauce
  • 1 tbsp tomato puree
  • 3 spring onions, finely sliced
  • 2 tbsp fresh coriander, chopped
  • 0.5 cucumber, deseeded and cut into thin batons
  • 30 g peanuts (optional)
  • 1 pinch salt and pepper
  • 14.1 oz brown basmati rice
  • 4 large eggs, beaten
  • 8.8 oz leftover roast chicken, shredded
  • 1 onion, peeled and sliced
  • 3 garlic cloves
  • 1 red chilli
  • 1 tbsp brown sugar
  • 2 tbsp soy sauce
  • 1 tbsp tomato puree
  • 3 spring onions, finely sliced
  • 2 tbsp fresh coriander, chopped
  • 0.5 cucumber, deseeded and cut into thin batons
  • 1.1 oz peanuts (optional)
  • 1 pinch salt and pepper
  • 14.1 oz brown basmati rice

Step-by-step

  1. Cook the rice to the packet instructions. Drain and leave to cool.
  2. Beat the eggs and season with salt and pepper. Heat some oil in a non-stick pan and add the eggs. Roll around the pan to coat thinly. Cook for 1-2 minutes then flip and cook for a further minute. Roll the omelette and slice.
  3. Blend half of the onion along with the garlic, chilli, sugar, tomato puree and soy until smooth.
  4. Add the oil to a hot pan and fry the other half of the onion until soft. Add the shredded chicken and the puree. Cook for a couple of minutes then add the rice and fry for 3-4 minutes until heated through. Add the spring onions and coriander.
  5. Divide the hot rice between four bowls. Top with the cucumber, sliced omelette and a few peanuts if liked.

Dutch Style Indonesian Fried Rice

Serves 4. Chop meat in a-little-smaller-than-bite-sized pieces. Heat (sunflower)oil in heavy frying pan. Put in ginger and garlic until the oil starts to smell nice. Fry a small piece (1/2 teaspoon) of trassi, crush it into small lumps before putting it in the hot oil. Optionally, remove ginger, trassi and garlic after this stage. Add meat and fry until done and brown. Add onion and leek, fry for a few minutes. Add sambal and fry. Add egg, add portions of rice before egg sets. The stuff should get sticky-ish. Keep adding and frying parts of the rice until all rice has been fried golden/brownish. Keep stirring very well! Bring to taste with some soy sauce and a little vetsin. Add the beansprouts the last minute to prevent them from getting cooked. Optionally, stir in some finely chopped ham just before serving. Serve with a fried egg, sweet-and-sour veggies, chop suey or other side dish of your choice. Notes: Sambal ulek is a paste made of hot peppers and a little oil. Trassi is a paste made of prawns which are dried and fermented. Vetsin is a flavour-enhancer.

9) No Obligation. Although we have the right to include your Materials in the Service or in any Media, we do not have the obligation to do so. We may, in our sole discretion and for any reason, refuse the Materials or remove them from our Service at any time.

10) Changes to Agreement. We reserve the right to change any of the terms of this Agreement or any Specifications or Guidelines governing the Service at any time in our sole discretion. All changes will be effective upon posting to the Service. However, for all changes to this Agreement, excluding Specifications and Guidelines, we will post a notice of change for thirty (30) days. No, all images must be uploaded to Prime Publishing. This ensures your image is always available.

How long does it take to upload an image?

The time varies depending on the speed of your Internet connection and the size of the image file. For a 400KB image, for example, you should expect 2 to 4 minutes over a 56KB modem and under 1 minute for DSL or cable modem.

Where will my image appear?

Generally your image will appear where you uploaded it: in the article image gallery.

Who owns the images I upload?

The rights owner of the image continues to own the image uploading your image to Prime Publishing does not transfer ownership.


Indonesian Fried Rice (Nasi Goreng) Recipe

Happy Monday everyone! For today’s recipe, we’re making one of the most popular dishes in Indonesia, fried rice! And I know what you’re thinking, how different can it be than your regular Chinese takeout fried rice? Well, my friend, Indonesian fried rice, or nasi goreng, is filled with so many flavours that cannot be found in any other kind of fried rice. Indonesian dishes are known to be super bold and flavourful, and it definitely shows in our fried rice too! It’s spicy, it’s salty, it’s sweet, it’s just plain delicious!

When I was living in Indonesia, they would always serve the fried rice in a particular way in the restaurants. They’d put the rice in the middle, with some fried egg on top, and they would put additional sides around the rice like shrimp crackers (krupuk) and veggies. As a kid, I found it super fun to eat! And that’s what we’re trying to recreate today! Bringing in those exotic, tropical flavours from Indonesia in your home!

Let’s start with the ingredients, which are the most important part of this recipe! In order to make an Indonesian fried rice, there is one very important ingredient that you MUST have. And that’s kecap manis, or Indonesian sweet soy sauce. It’s thick, sweet soy sauce that contains molasses and that gives the fried rice that unique, sweet and savoury flavour. You can find it in some Asian supermarkets, which is where we bought ours, but you can also buy them online if you cannot get a hold of them in your area.

We were inspired in parts by our family’s recipe and Hot Thai Kitchen’s version of Indonesian fried rice, which we found to be really well developed! In this recipe, we used shrimp paste, which if you’re not used to can be very pungent and strong. But we do suggest you put in at least a little bit, since it gives the fried rice more layers of rich flavours. We also used sambal terasi in our version, which is Indonesian chilli sauce mixed with shrimp paste. It’s just our own preference, so you can definitely use chili sauce of your choice as long as they’re not too sweet!

The sides are also what makes Indonesian fried rice unique. The fried egg is a must, since they do add some rich texture to the dish as whole. We also usually eat it with krupuk, or crackers. Our favourite is shrimp crackers, but you can choose another kind such as tapioca or fish crackers, which are also very delicious! It is a bit hard to get a hold of Indonesian crackers even in Asian supermarkets, but they do sell Indonesian shrimp crackers online too. The crackers add some crunch and texture to the fried rice, but they’re completely optional. So if you can’t get a hold of it, it’s definitely fine, your nasi goreng is still going to be delicious!

Hope you try this recipe for fried rice, because it’s definitely different and unique in flavours. Some of the ingredients are a bit harder to get, but if you do plan to cook a lot of Southeast Asian food, they’re definitely worth buying!
