Ingredients for cooking potatoes with zucchini and tomato paste
- Potato 500 grams
- Bulgarian red pepper 1/2 pieces
- Bulgarian green pepper 1/2 pieces
- Onion 1 piece
- Green onion 1 piece
- Zucchini 1 piece
- Extra virgin olive oil 1 tablespoon
- Tomato paste 1 tablespoon
- Salt to taste
- Pepper to taste
- Main ingredients: Potato, Onion, Pepper, Zucchini
Inventory:
Frying pan, spatula, kitchen knife, tablespoon.
Cooking:
Step 1: wash the vegetables.

Rinse, peel and prepare the vegetables for slicing.
Step 2: stew the potatoes.

Heat oil in a pan (I have a convex bottom), send diced potatoes into it, pour hot water and stew.
I definitely put water next to the pan, which I constantly heat, so that later I can pour it into the vegetables. It is very important to stew them rather than fry them.
Step 3: add pepper.

About 10 minutes add finely chopped bell pepper to the potatoes and continue cooking.
Step 4: add the onion.

When the peppers became softer, I sent chopped onions and green onions into the pan. And do not forget to add volatile water.
Step 5: add the zucchini and tomato paste.

Across 10 minutes after adding the onions, send the zucchini, sliced in medium sized slices, and tomato paste into the pan.
Step 6: bring to readiness.

Boil vegetables for 15 minutes still, about to readiness. At the end, salt and pepper to taste.
Check the readiness of vegetables with a fork, slices of zucchini and potatoes should be easily broken.
Step 7: serve the potatoes with zucchini and tomato paste.

Put potatoes with zucchini and tomato paste in a deep plate and serve! Such vegetables are tasty in themselves, with bread.
