Thick, fat, juicy, meaty, super healthy veggie burgers… that are totally plant based!
The best part about these savory vegan veggie burgers (aside from how ridiculously simple they are to make) is that you get to choose the ingredients.
The recipe is easy to customize, so you can throw in whatever veggies you happen to have available.
I love turning them into mushroom veggie burgers and serving the burgers topped with caramelized onions. Or if you’re not a fan of mushrooms, you can easily leave those out.

How To Make Veggie Burgers
The recipe can come together with just a few minutes of prep work.
Start by draining and rinsing the beans, then mash them either with a fork or in a food processor. Stir in all other ingredients, and form into patties.
You can bake, fry, or grill the burgers, and leftovers can also be frozen, so they are great for meal prep!
Vegetarian Burgers On The Grill
For grillable veggie burgers that won’t fall apart, start by preheating your grill on high. Cook the patties on a greased sheet of foil for 7-8 minutes per side.
Serve with your favorite burger toppings—ketchup, mustard, avocado mayo, pickles, onions, relish, etc.—on buns or in lettuce wraps for a lower carb option.
Feel free to use whatever beans you want in the recipe too, such as black beans for black bean veggie burgers, or white, kidney, or pinto beans.

My favorite option to go with is pinto beans because of their thick texture and similar color to traditional beef burgers.
And no, they are not supposed to taste exactly like meat. Similar to most of the veggie burger brands—such as Boca, Amy’s, Morningstar Farms, Dr. Praeger’s, or Gardein—that you can find in the frozen aisle of Whole Foods, Target, Walmart, and many regular grocery stores these days, the burgers are good in their own right, not as a substitute for something else.

Here are the tips you need for cooking the best possible burgers in your own backyard.

Start With the Right Beef
Start with the Right Beef
The best burgers are made from freshly ground, high-grade beef chuck in an 80/20 mix (meat to fat). Spread the beef out flat and season with salt and pepper. If you have a secret ingredient like Worcestershire sauce or chopped bacon, add it now. Toss together gently. You don't want to overmix.
Making the Patties
Grab 5 to 6 ounces of meat and lightly toss from hand to hand, forming a ball.
Pat It Into a Disk
The patty should be at least as wide as your bun and about 3/4 to 1 inch thick.
Perfect-Burger Secret Tip
Make a divot in the middle of the burger with your thumb to help it keep its shape while cooking. These patties can be made ahead and chilled in the fridge.
Preheat the grill to medium or medium-high over direct heat. Oil the grate with a neutral-flavored oil like canola or vegetable. When the oil begins to smoke, it's hot enough to add the burgers. Make sure your burgers are at room temperature, and season them again with salt and pepper. Put the burgers on the grill and let them be. The less touching, the better the burger. For a juicier burger, resist the urge to press down. Cover the grill.
Time to Flip
It's time to flip when the burger releases from the grate without sticking.
For medium burgers, cook for about 5 minutes per side. For well-done, go a little longer.
To add cheese, move the burgers to the cooler side of the grill, top with cheese and cover the grill for a minute to let the cheese melt. Place the patties on buns, add other toppings and serve.

- One (15-ounce) can of beans has approximately 1 1/2 cups of cooked beans (here’s our recipe for home cooked black beans).
- Other beans work for this recipe. Try cannellini beans, kidney beans and chickpeas.
- Cooking brown rice: We love the texture and flavor of brown rice, but you can use white rice in its place. To cook brown rice, forget the package directions and cook it like you would pasta. Fill a large pot with lightly salted water, add the brown rice then let it cook, uncovered, at a simmer for 30 minutes. Drain the rice then add back to the pot off of the heat with a lid covering it so that it steams for an additional 10 minutes. This method is from Saveur and it really does make perfect brown rice.
- Vegan / egg-free veggie burgers: If you don’t eat eggs, you can leave the eggs out and use flax eggs as a substitute. Whisk 2 tablespoons flaxseed meal with 6 tablespoons water. Set the mixture aside for 5 to 10 minutes, and then use in the recipe to replace the eggs.

It’s how often I drove to Small Cheval in Chicago and ate their life-changing cheeseburger.
Hey, cheeseburgers can be life-changing.
And this one definitely is! Small Cheval (and it’s larger sister restaurant, Au Cheval) is notorious for serving up the best burger in the entire country. And it’s no joke. It’s pretty unassuming and quite unpretentious but guaranteed, you will never in your life have a better burger. It’s just impossible.
Well hot damn I replicated the damn thing at home! What was I supposed to do after moving from Chicago to California? Fly back twice a week for burgers?
This recipe. It is so. freaking. delicious.
So yeah, there are a million delicious burger recipes floating out there, but I’m telling you, this one, it’s just something out of this world.
It’s incredibly juicy, greasy (as any real burger should be!), flavorful, and… fabulous.
I mean, what else can I say? It’s just the most simple combo of really natural and quality ingredients that make the biggest difference ever.
You can find the exact quality ingredients I use. Just take a peek at the ingredients in the recipe below and you’ll find everything you need to make it just like I do to ensure you get the best burger ever.
And yes, the secret ingredient is beef tallow, which is just another way of saying beef fat. But please don’t fret about that. It’s actually wonderfully healthy!
Problem is we’ve just been misinformed for a few decades now. Did you know it is probably one of the most (if not the most) powerful antioxidant-dense products you could consume? And unlike certain biochemically reactive unsaturated oils (I’m looking right at you canola), saturated fats like tallow or butter doesn’t damage your cells. In fact, your cells live off this stuff and will thank you by giving you better health as a result.
So throw out the old and awful myth about saturated fats being bad for you (and by the way they do NOT raise “bad” cholesterol, which also by the way is not “bad” as it turns out), and throw out the canola and vegetable oil, and eat an honestly healthy cheeseburger already. With plenty of fat to boot.
