As I promised you, I came back with the recipe for the appetizer prepared for the Martisor menu.
Here's what we need:
4 potatoes, round, if possible, about 10-15 fresh mushrooms, depending on size, I had 10 pcs. with diameters of about 3-3.5cm, 50g butter, a medium onion, I had 3 green onions, a cube of gorgonzola cheese, 3 tablespoons thick cream, 2 tablespoons flour, a cup of milk (cup of coffee), a little salt , pepper, a few sprigs of chopped green parsley, 100g cheese (I used smoked cheese), a tablespoon of lemon juice, 4 cherry tomatoes.
How I proceeded:
I washed the potatoes well and boiled them in the shell, over low heat, for about 60 minutes.
In the meantime, I prepared the mushroom filling as follows: I washed the mushrooms well, chopped them finely and put them in a bowl. I cleaned and finely chopped the onion, then put it in a pan with a tablespoon of butter soaked it over low heat. After the onion softened, I added the chopped mushrooms, I added a little salt and let them simmer for about 15 minutes, over low heat.
In the meantime, I prepared the sauce. I put the cream in a bowl, I added flour, a pinch of salt, a pinch of pepper, chopped parsley, then I thinned with milk.
When the juice left by the mushrooms decreased (not at all) I added the sauce and mixed continuously until it bound well. I then added the cube of crushed gorgonzola cheese between my fingers and I homogenized the composition, I tasted it, then I added the lemon juice and ready.
After the potatoes boiled, I let them cool a bit, then peeled them. I cut them in half and lightly scooped out their core with a teaspoon, leaving an edge thick enough not to break.
I greased the heat-resistant dish with butter and I placed the potato halves in such a way that they fit and fill the bowl.
To give them more stability, I cut a thin strip from their concave side before placing them in the bowl.
I then filled the potato halves with mushrooms, as seen in the next image on the left, then sprinkled grated cheese on top, as can be seen on the right.
For a more pleasant image, I put another word of cherry tomatoes cut in half.
I put them in the preheated oven for 15-20 minutes. Check after 15 minutes so that it does not burn but the cheese catches a light crust.
And here's what they looked like when I took them out of the oven:
I served it with sour cream placed next to it, on plates.
I didn't have time to photograph the plates, because the "eagles" rushed to devour them :) :)

Here's how you can make peasant potatoes in your own kitchen without involving any frying!
Ingredients for 6-8 servings of baked potatoes:
10 slices of bacon
5 large new potatoes
3 medium onions
20 cloves of garlic
3 teaspoons dried thyme
freshly ground black pepper
4 steps to prepare peasant potatoes in the oven:
1. Preheat the oven to 218 ° C. Meanwhile, place the slices of bacon in a baking tray and leave until golden brown for about 10 minutes, then remove and place on a plate. Do not drain the fat left by the bacon.
2. If you use new potatoes, they do not shake, just clean well of dust and dirt under a stream of cold water and slice lengthwise, each into 4 large slices. Place the potato slices in the pan, stir a little to cover in the bacon fat. You can also add a little olive oil if you think they are not completely covered.
3. Peel the onions and cut them in the same way, into slices. Add the onion slices over the potatoes. Peel a squash, grate it and add it to the potatoes and onions. Sprinkle rubbed thyme between your fingers to release the flavors, and salt and freshly ground black pepper.
4. Leave this composition in the oven for about 40-45 minutes or until the potatoes are browned and you can put a fork in them without weight. Before serving, sprinkle with chopped bacon and add salt and pepper to taste.
The first steps in the kitchen
